Chef's Notes
The recipes in this book are a collection of recipes that I used through
the years. I have sometime enhanced, altered, used them as models
to create other recipes or accommodated them to the diets and/or requirements
of the Governors, their families and the staff. We have always endeavored
to use Maine products as they are available. There are more now than
ever before due to the fact that we have become a state of cottage industries.
Many people move to the State of Maine ot live life the way it should be
lived. Those of us who can should do our very best to preserve those
qualities that have helped our new set of entrepreneurs to excel.
As you travel through the years of recipes you will notice the evolution
of healthier foods and preparation. As chef and mother, caregiver
and nurse, I have learned more about the effect of food on the human body.
The damage we do in earlier years is often hard to undo in the later ones.
Pay attention to your life, feed your body and mind with great care and
remember to love yourself.
